Three honeys, one beekeeper
The honey is not ours. It is produced at the Kastelic apiary near Stična and we buy it from a neighbour, because we know where it comes from and because it is a little different every year, as the forage is.
The acacia is the lightest and mildest and stays liquid longest. The chestnut is dark and markedly bitter. The fir is not a flower honey at all but honeydew from conifers: thick, dark, with a resinous note.
Honey is a food. It is not given to children under one year of age.
