Wild garlic (Allium ursinum) is a spring bulb with a strong smell of garlic and broad, lance-shaped leaves, each growing singly from the ground on a long stalk. It grows in dense stands in damp deciduous woods, often beside streams, from March to May.
The leaves are gathered before flowering, when they are at their most succulent and fragrant; single leaves are picked, not whole bunches, so that the plant can come to maturity. Wild garlic is used fresh or pickled, and is not suitable for drying, because it loses its scent.
Care is essential when gathering: the leaves can be mistaken for those of lily of the valley and autumn crocus, both of which are poisonous. Use and evidence
Use as a food is well established, but the clinical evidence for treating hypertension, atherosclerosis or infections is not sufficient.
Safety and precautions
The greatest risk is a lethal mix-up with autumn crocus, lily of the valley or white hellebore; the smell alone is not a safe enough way to identify a whole gathered bunch.
