Horseradish (Armoracia rusticana) is a perennial with a massive root and a pungent smell, which keeps to the edges of gardens and lasts for years. The fresh root is used, above all as a seasoning. Traditionally used for a cold, and externally in compresses.

Horseradish (Armoracia rusticana) is a perennial with large leaves, up to a metre long, and a massive white root that drives deep into the ground. It grows in gardens, at the edges of fields and beside paths; once it has taken root it is hard to get rid of, because it shoots again from every piece of root.
The root is dug late in autumn after the first frost, or early in spring, when it is at its most succulent and pungent. It is kept in damp sand in the cellar, because dried it soon loses its strength. For vinegar and spreads it is grated fresh.
The pungency is released only on grating, when mustard oils are set free in the cut tissue; that is why horseradish stings the eyes. In Stična it appears in Ašič's Apple Cider Vinegar with Horseradish.
Use and evidence
There is not enough clinical evidence for treating pneumonia, asthma, urinary infections or cancer. A burning sensation is not proof of antimicrobial effect in people.

Larger quantities can strongly irritate the digestive tract, the skin and the eyes; care is needed with ulcers, with diseases of the kidneys and in small children.
