We make the sparkling honey wine to an old monastery recipe from quality Slovenian honey and mineral-rich spring water, which we seek out in the hidden corners of the Slovenian mountains. With carefully chosen yeasts we turn the water and honey into a quality honey wine, or mead, and the final fermentation in the bottle produces a delicious, sparkling mead.
